Easy Like Sunday Morning

At BJs PJs we’re all about taking time out from our crazy, hectic lives for a bit of rest and self-care.  There’s nothing quite like a leisurely Sunday morning at home in your PJs to kick the day off right and to give yourself some well-earned downtime.

Our perfect Sunday starts with a sleep-in, cuddles, strong coffee, papers and someone to serve up a delicious breakfast, preferably a big fat stack of hot pancakes.

We’ve included our go-to buttermilk pancake recipe for you to try. Okay, we know pancakes take a bit of time and effort to whip up, but they’re so worth it. Instead of rushing through the process take your time, teach the kids or your partner to make the batter and flip them. Sit out in the sun or jump back into bed and enjoy them with fresh fruit, maple syrup and butter. Heaven.

 

Easy Buttermilk Pancake Recipe

Buttermilk pancakes are thick and spongy with less fat needed to achieve the softness.

Ingredients

  • 2 cups self-raising flour if using plain flour add 1 teaspoon bicarb soda and 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 2 eggs
  • 2 tablespoon melted butter or oil
  • 2 cups buttermilk

Instructions

  • Mix all dry ingredients together.
  • Beat the eggs and add melted butter or oil.
  • Add one cup of buttermilk to the eggs, mix well.
  • Pour buttermilk and eggs mixture into dry ingredients and mix all quickly into a thick batter with a whisk. By adding half the required liquid first the batter will be smooth and without clumps.
  • Now add the second cup of buttermilk and incorporate gently. Add more buttermilk if the batter is too thick.
  • At this stage you can add some corn, herbs, grated cheese or carrot for savoury or chopped fruit or berries for the sweet version.
  • Pour the batter into a medium hot oiled pan. Cook as many at the time as you can fit in your pan without sticking together.
  • Turn over when bubbles appear on the top and cook the other side until golden.
  • Serve warm.

Note:  To memorize this recipe easily, just think “2 2 2“: 2 Cups SR flour, 2 eggs, 2 Cups buttermilk!  Easy peasy :) x
